So are they doing away with Jeyne Westerling or what?

Obviously. They made her a Volantene or something. It's a weird decision, since it seemed that Jeyne was going to figure somehow in the later books. But GRRM clearly okayed the decision to write her out. So maybe she won't matter anymore after all?

I'm really curious how they will circumvent the Red Wedding. Also, the Volantene woman...his wife now... is played by Charlie Chaplin's granddaughter Oona.

They're not circumventing it. I think I read something about how reading the Red Wedding was the reason the guy at HBO had the idea to do the series.

*Potential spoiler alert ahead*

And Matilda as Shireen Baratheon? I wonder how that's going to work out.

There are a lot of characters that were pretty critical in the 2nd book that didn't make it into season 2. I think they did this to include more "Robb" time. I guess they preferred to keep Robb in for S2 (the 2nd book barely mentions him) as opposed to add 5-10 new "main" characters and plot lines from the Tullys. Hell, they are just getting around to introducing Thoros of Myr and he was introduced in one of the first chapters of Book 1. For the same reasons they left out Jeyne, most likely.

I don't really like what they did with the rearranging of the Jon, Quorin and Ygritte plot line and I hope they are more faithful to the story in S3.

These are really minor complaints though. The show is great, and I understand that there's no way they can fit 800 pages into ten episodes lasting 50 minutes each.

McKenzie Crook is playing orell (a skin changer). The rest of the new cast also looks great.

Yeah, Diana Rigg (also known as the hottest Bond girl of all time...) was cast as the Queen of Thorns!

Last nights episode was pretty boring in comparison. Just plot setup for next season with no real action.
